Acid-base constitution theory
Most people may not know the name of Robert Ouyang, but everyone must have heard of these statements such as "Human physique is divided into acid and alkaline, food is divided into acidic and alkaline, and drinking weakly alkaline water is good for health..." After hearing it, many people even believe it. Ouyang is the founder of this "acid-base constitution theory". He believes that the acidity in the human body is the culprit that causes people to become sick and obese, and that eating alkaline foods can restore health.
Ouyang wrote a best-selling book "THE pH MIRACLE: Balance Your Diet, Reclaim Your Health" in 2002, which made the acid-base theory very popular. He struck while the iron was hot and published "THE pH" one after another. MIRACLE FOR DIABETES: The Revolutionary Diet Plan for Type 1 and Type 2 Diabetics" (Diabetes pH Miracle, temporary translation), "THE pH MIRACLE FOR WEIGHT LOSS: Balance Your Body Chemistry, Achieve Your Body Chemistry, Achieve Your Ideal Weight" (The pH Miracle for Weight Loss, tentative translation) and other "miracle" series, each book is a big seller and makes a lot of money.
Who is Ouyang? Why does everyone believe in his theory? This is not unrelated to Ouyang's "academic master" character. He claimed that he attended the University of Utah in his early years, studying biology and business, but did not graduate. Later, he obtained multiple degrees from Clayton College of Natural Health, including a master's degree in nutrition, a doctorate in chemistry and biology, and a doctorate in natural medicine.
Just looking at his academic qualifications, Ouyang is obviously an expert in medicine, biology and nutrition. In addition, the acid-base theory itself is easy to understand, so his words are easily accepted by the public.

The Ouyan theory was not fabricated out of thin air. It was one of the schools of microbiology in the late 19th century. At that time, some people believed that when the surrounding environment was acidic, red blood cells would transform into bacteria. In fact, this theory had already followed the germ theory. As for Ou Yang's theory of human body acidity and alkalinity derived from this, it is even more nonsense with a vague concept. First of all, there are many kinds of liquids in the human body: blood, sweat, urine, gastric juice, saliva, etc. The pH value of each liquid is different. For example, the pH value of gastric juice is close to 1, which is highly acidic. The pH value of blood is usually maintained between 7.35 and 7.45. It is weakly alkaline, so what is the acidity and alkalinity of the human body?
Most theories of "acid-base constitution" will mention that "a body fluid with a pH value lower than 7.35 is an acidic constitution" and is harmful to the human body. This is not completely unreasonable, but a more scientific statement is that if the blood pH value is lower than 7.35, human cells will not be able to complete normal physiological functions, which is called "acidosis". If the pH value is too high, "alkalosis" will occur. These are very serious diseases. They are by no means a simple "acid/alkaline constitution", nor can they be caused or cured by eating acidic or alkaline foods.
The popular method in the market for classifying the pH of food is based on the acidity and alkalinity of the solution after the ash produced after complete combustion of the food is dissolved in water. However, it is of no use. High school biology textbooks tell us that normal organisms coordinate the activities of various organs and systems through regulation to jointly maintain a relatively stable environment. Therefore, there is no need to worry about the acidity and alkalinity in food.
